Meal Idea: Crockpot Stuffed Pepper Soup
Here's a great easy meal idea to cook on those busy days when you know you'll be short on time to make dinner. A balanced mix of protein, carbs and veggies to keep you full and satisfied.

Ingredients: 2 pounds ground beef 1 medium onion, chopped 2 cloves garlic, minced 2 bell peppers (any color), sliced 1 24oz cans tomato sauce 1 14 oz cans stewed or diced tomatoes, undrained 2 cups beef broth 2 cups water 2 tablespoons brown sugar 1 ½ teaspoon Italian seasoning ½ teaspoon garlic powder Salt and pepper to taste 2 dashes of crushed red pepper 1 1/2 cups of white or brown rice Directions: In a skillet brown beef, garlic, and onions until beef is cooked through and onions are translucent, about 7-8 minutes. Transfer beef mixture to the slow cooker along with remaining ingredients, except for rice. Cook on high for 3 hours or low 6-8 hours. Towards the end of cooking cook the rice separately. Add to soup at the end of slow cooking. Alternatively, scoop cooked rice onto bowls of soup when serving. You can replace rice with cauliflower if you prefer. Enjoy😋
